With the addition of the thai basil, coconut sugar and soy sauce, this curry has that familiar slightly sweet but savoury flavour. I used a bought paste this time because I was pressed for time.

      What makes the curry spicy is the use of the liberal amount of chilis which also comes in many varieties.
